As many of you already know, I love cookbooks and lately I have been creating my own recipes. It was hard for me to narrow it down but here are a few that feature the ingredients I shared yesterday.

Aloe-grapefruit–ginger-shots-recipe I found this recipe on Kimberly Parsons The Yoga Kitchen cookbook. Kim includes this in the Pure section of her book and says that “Fasting and detoxification become normal practice as a way of staying “pure” and focuses on food which detoxifies the body, making us feel light and deeply connected to ourselves and the outer world”.
This is the first shot I ever made and I often drink this first thing in the morning before breakfast . It has a real zing to it . Even Sergio takes one very now and again when he’s feeling adventurous.
I noticed that afterwards that I forgot to remove the price-tag on the aloe vera juice! As you can see it’s a bit pricey but one bottle goes a long way and is totally worth the investment 🙂

Sometimes I add a piece of fennel and pear and make it a juice health-benefits-fennel . For me, anything that can help with inflammation is a god send !

Years ago when I was pregnant, I used to wake up in the night and sneak downstairs for a bowl of Frosted Flakes. At the time, nothing tasted better ! Here I am years later and, although it happens much less frequently, if I wake up, I stumble to the kitchen and pour myself a bowl of home made granola and douse it with vanilla oat milk….oh my goodness how things change !

Mango muffins that melt in your mouth vegan-crumble-muffins-recipe inspired by First Mess . All I did was substitute the strawberries with mangoes. Devine 🙂
Arugula salad with Pear, Marinated Shallots and Spicy Grapefruit Vinaigrette

This is my own creation – “Full of Goodness”

Serves 4-6

Arugula ( I measure depending on how many people will be at the table…1 handful per person ?)

Fermented shallots ( I love Juniper Farms version but you can always make your own !)

1-2 pears diced

1/4 cup toasted pine nuts

1-2 dried figs ( optional )

1/2 cup crumbled goat’s milk cheese

Grapefruit Vinaigrette

Combine ingredients in a small jar and shake .

Pour over salad just before serving .

  • Juice from 1/2 pink grapefruit
  • 1/4 cup extra virgin olive oil or camelina oil
  • 2 Tbsp champagne vinegar
  • 1-2 cloves crushed garlic
  • 2-3 Tbsp honey ( to taste )
  • red Chile flakes ( to taste )
  • salt and pepper

. Kimberly says she chose ingredients to help with concentration, memory and known to nurture the nervous system . Works for me !

I replaced the lemon verbena with a lemon rind which I removed after cooking. I didn’t have liquorice powder (who has liquorice powder ??) with vanilla powder and added maple syrup to sweeten it up .

Blueberries or strawberries….the choice is yours 🙂

Matcha Raspberry Dark Chocolate Chunk Muffins inspired from Cookie and Kate food blog healthy-raspberry-muffins-recipe. I added 2 tsp of matcha powder ( you can add more if you like !) and a cup of vegan dark chocolate chunks . Et voila ! Note -they looked more green than they do in this photo!

Matcha Chai Pudding with Mango Puree matcha-chia-pudding . I added mango puree on top to give it a sweeter taste. Loved it !
This pasta was inspired by lemony-spring-pasta-salad-vegan-recipe by First Mess . I put my own spin on it and it tasted fabulous . So so simple . I added wilted greens, pine nuts, dried figs and feta. Truly amazing flavour combo !
Creamy oats silky-creamy-oatmeal from Cardamon and Tea . Absolutely hands down the best I’ve ever tasted. When I need a boost of energy this totally does the trick ! I top with Blueberries, pecans , bee pollen and hemps seeds or pear compote inspired by Green Kitchen at Home cookbook apple-ginger-cardamom-compote. I just substitute the apples with pears . So yummy !!
