The perfect pancake . On your plate and ready to eat in less than 20 minutes !!
Feeling like a bit of sweetness to start off your day ?
I must admit, my reputation when it comes to making pancakes isn’t great. In fact it’s terrible !
This is absolutely the best pancake I have ever tasted and definitely the best I’ve ever made.
Inspired by my favorite food blogger Laura Wright Gluten-free-vegan-lemon-poppyseed-pancakes-with-strawberries
I made a few simple adaptations .
Et voila!
PANCAKES:
1 cup non-dairy milk * I used Earth’s Own Naked Oat Original
1 tsp lemon juice
1/2 cup + 2 tbsp rice flour (brown or white) * I used Superfine Brown Rice
1/4 cup sorghum flour
1/4 cup arrowroot powder
1/4 cup cornmeal
2 tsp baking powder
zest of 1 lemon
1 tbsp poppy seeds * I used Chia Seeds
1/4 cup melted extra virgin coconut oil + extra for the pan/griddle
3.5 tbsp agave nectar *don’t have any on hand ? I’m sure maple syrup would do the trick !
1/2 tsp vanilla extract
I topped my pancakes with wild blueberries and some maple syrup ….incredible flavor combo with the hint of lemon in the pancakes 🙂
