Another recipe to inspire you in the kitchen….
Simple, healthy, seasonal and oh so good ๐
I love bowls .
I almost caved in and got Sergio to make supper last night but then I took a look in the fridge and came up with this.

1 cup Quinoa cooked in bone broth ( follow instructions on package of quinoa and add a TBSP of bone broth powder to the water ) – alternatively you can use veggie broth but sadly I didn’t have any.
Roasted cherry tomatoes and asparagus ( around depends on number of people you are serving ). I love roasted anything so always make a lot so that I can have leftovers. Pre-heat oven to 425 and roast for 30 minutes ( keep an eye – I’ve been known to burn mine every now and again !)
Soft boiled egg ( cook eggs in boiling water for 6 minutes – 1 egg per person )
*Watercress – a superfood – who knew ? watercress-benefits I picked mine up at Farm Boy ๐ It has a nice peppery taste – ideal for a bowl ( keep in mind that any greens would do ie spinach, kale but I would recommend sautรฉing in olive oil if you choose either of these – sometimes I add a pinch of pepper flakes and a sprinkle of sea salt)
Left over tempeh
*I noticed after I took the photo that I forgot to add this ๐ฆ Too bad….it would have been perfect . See Recipe from June 14. If you don’t have leftovers….make some. 1 pkg tempeh cooked in olive oil til brown. Sometimes I add a splash of maple syrup, tamari, paprika and salt and pepper ( inspired by First Mess cookbook- see Top picks: First Mess The-first-mess-cookbook
*Feta – I have discovered a dairy free feta which is truly divine feta-style .
Black olives – Kalamata are my favourite !
Delicious vinaigrette in seconds …
1/4 cup oil ( I use camelina or olive)
1 garlic clove crushed
Juice of a lemon
1 TBSP honey
salt and pepper to taste
To assemble :
Place quinoa in the bowl; top with roasted veggies, greens and feta; chop soft boiled egg and place in bowl; add black olives and drizzle vinaigrette over top.
ET voila …..that was easy ๐
There are a million and one ways to make a bowl. Here are some suggestions….
Roasted carrots; beets; eggplant …..depends on the season
Greens ( what ever you fancy )
Grains ( Barley, millet, bulgur, ancient grains , spelt berries ….so many to choose from )
Cheese is optional but I love goat’s milk and feta ๐
Toasted nuts (sliced almonds are my fave ) ….or pine nuts ?? Expensive but so worth it ๐
Seeds : Pumpkin ; sun flower ; hemp; sesame
Fermented/pickled something ….kimchi; shallots; red onion ; watermelon radishes ??
Vinaigarette is so easy to make ….oil base; splash oil vinegar ( I love champagne; sherry and balsamic) ; herbs and spices ( garlic; shallots; ginger; basil ) ; lemon or lime; miso; red chilli flakes; maple syrup or honey; salt and pepper.
