
I know…..it’s been way too long . 21 Days in a row and them BAM…..silence for the next two months!
I’m only just starting to overhaul my website now. Summer has gotten in the way of things π
Early morning swims, biking and lots and lots of visitors. Hence….tons of cooking.
This time of year there are so many good things to choose from produce wise. Everything is so fresh and beautiful.
I am attempting to get back in the swing of things and thought I would share some absolutely divine recipes.

Grilled flatbread roasted veggie chicken sandwich
Flatbread is so simple and full of goodness….

You can put anything in it. My creation was a combo of roasted cherry tomatoes from Juniper Farm https://juniperfarm.ca ; fresh corn; grilled chicken breast; vegganaise ; beet slaw ( recipe to follow ) and feta cheese.

I toasted mine in a sandwich press . It doesn’t look half as good as it tasted π

1 Cup Kefir 10-benefits-of-kefir
1 cup wild blueberries ( or any berry will do – whatever you have )
1 banana ( frozen )
A touch of maple syrup to taste
1 tsp acai powder ( optional )
1 tsp bee pollen ( optional )
1 TBSP each ( hemp seed; chia seeds; flax seeds)
Vanilla to taste

There is a recipe that I haven’t tried but I’m sure would be just as wonderful vegan-peach-blackberry-crumble-crisp and available on Desiree Nielsen’s website. It’s on my list of things to try. If you happen to try it let me know what you think!

Have you even heard of jackfruit ?? I’ve been wanting to try it forever and finally I gave it a try. Great alternative to pork and turns out it’s a superfood https://www.healthifyme.com/blog/5-reasons-raw-jackfruit-superfood/ Even Sergio loved it π
Oh and I decided to make my own tortillas. Super simple. Mine turned out a wee bit on the thick side and were more like naan bread but, they actually tasted delicious Best-ever-homemade-flour-tortillas

Last but not least the recipe to the above photo. I just made some this morning. Monday tends to be my detox day π
Let’s call it …
Quick Detox Monday Soup !
Cook :
1 TBSP olive oil
1 onion chopped
Β 6 cloves garlic ( pressed )
1β ginger grated
Red pepper flakes ( or chili )Β
1 tsp turmeric
salt and pepper to taste *I used lemon basil salt by Boreal Farm , Low Quebec borealfarmstore
Add:
3 cups veggie broth( unsalted )Β
Bring to a boil and add :
ΒΌ cup chopped cilantro
ΒΌ cup parsley
ΒΌ cup fresh basil
1 cup watercress
1 cup curly kaleΒ
Cook for 3-5 minutes
Transfer to a blenderΒ
Pour into bowls and and top with vegan parm inspired by Cookie and Kate easy-vegan-parmesan-cheese-recipe
